Thai Peanut Chicken

It's no secret.  I love pad thai.  I like my pad thai with a little bit of chili paste on the side, which I delicately dip the tines of my fork into before each and every bite.  Love.  It.  So I attempted to recreate the taste of it here.  As you may or may not know, the best part of pad thai is the crunchy peanuts that you can mix into it, and the fresh lime you can squeeze into it.  So this is what we get in our version.  Kinda!  And close enough to please my taste buds.


So with this one, you warm your entree, mix in all the spices, yes, including PB2 (TRUST ME), and then you squeeze lime juice onto it.  You have to, HAVE TO, use the lime juice.  It makes it zing.


And it will remind us of what fresh tastes like.  It's amazing what a little squeeze of liquid from a fruit can do to an entire meal.  Just awesome.




Thai Peanut Chicken

Ingredients:

1 Savory chicken entree
1 teaspoon low sodium soy sauce
1 teaspoon regular PB2
1 teaspoon white vinegar (I used rice wine vinegar, but any will do)
dash of paprika
1/8 teaspoon garlic powder
1/8 teaspoon curry powder
shake of red pepper flakes
juice of 1/4 fresh lime

The hardest part of this meal is assembling the spices.  Warm your entree in the microwave.  Add in the soy sauce, PB2, vinegar, paprika, garlic powder, curry powder, and red pepper flakes.  Add more flakes if you want more spice, or eliminate them entirely.  Mix well.  Cut your lime in half and squeeze some juice all over the top of your dish.  Take a deep breath and enjoy the aroma of this dish before digging in.
